
2019 EXCLAMATION CABERNET SAUVIGNON OAK AGED ICEWINE
Although 2019 was a rainy and cool year reduced crop yields for whites enabled some very good quality fruit, with rains lessening later in the season. All varieties stayed on the vine longer than usual to balance PH, Acidity, and Brix. In the fall there was an unusual early frost that hit the later maturing grapes increasing sugar levels. With conditions late in the fall drying out, we were able to have a successful Icewine harvest, particularly for thinner skinned varieties like Cabernet Sauvignon.
Cabernet Sauvignon consistently produces some of our most luscious and well-balanced Icewines. This one takes it a step further, as it was aged in French oak barrels to create something much more profound and complex. This Icewine simultaneously has vibrant aromatics of cherry compote, stewed red plum, and rhubarb jam, while also having more nuanced expressions of nutmeg, dark chocolate, and fruit cake, plus an underlying toastiness from its time aging in barrel. The palate is very soft with just enough acidity to preserve freshness and just enough sweetness to achieve an exceptional silky texture. As the wine moves into its long finish, the sense of fresh fruit moves into more dried fruits and tertiary characteristics, which will only become more prominent as the wine continues to age in bottle.
