Estate Wine Selections

Our Estate Carretto Series of wines use grapes from our home estate vineyards. Each vineyard and wine is treated individually since each has its own ‘personality’ that must be expressed. Our goal is to produce consistent, quality wine for our consumers: rich, full-bodied reds; fragrant and lively whites, all in a variety of styles to suit every palate. Popular blends include our Gewurztraminer Riesling and Cabernet Merlot.

Varietal Classified Selections

Selected Carretto Series wines are single varietal classified. These wines express the essence of Pillitteri’s mission statement; “To produce the finest wines possible from the highest quality Niagara Peninsula grapes.” Single varietal red wines are only produced in years which meet our strict winemaking and “minimum growing degree day” standards.

Wagyu & Wine is an intimate, interactive experience designed for up to six guests. Enjoy a hands-on culinary journey where you’ll experiment with seasoning, grill premium Wagyu to your liking, and explore thoughtfully paired wines. Set against the backdrop of our outdoor Tank Farm patio, every moment—from the sizzle of the grill to the swirl in your glass—creates a setting made for connection and memorable photos.

Please note, this is not a traditional meal service, but a guided tasting experience. Wagyu & Wine is a celebration of flavour, craft, and discovery—where each bite and sip invites you to explore the harmony between food and wine at your own pace.
